This strict adherence to using only the freshest available ingredients holds true for grass pastured, grass and grain fed beef, lamb and pork and the freshest cold water Scottish and Alaskan wild caught salmon. We take each ingredient for every recipe seriously, meaningfully employed and explored in a deep understanding of the recipe.
